Hold the mussel firmly in your hand and insert the knife between the top shell and bottom shell. Layer the mussels into the cooking container with the water. Cover the cooking container and place over high heat. Add chopped garlic, parsley, salt, pepper, olive oil and lemon juice.
Stir well. Pour the sauce and lemon juice over the mussels.
Garnish with toast. You may want to have more toasted bread on hand to sop up the delicious liquid!
